Kale with Turmeric Cauliflower & Sweet Potato

Okay guys I have something to confess. This is the first time I cook with kale! I just didn’t get into the hype a few year back when we where told this is the super food we must eat, it will save our lives and question why we didn’t know about this earlier. If it was served I would eat it but I didn’t go out and search for it.

So now I cooked it, has it changed my enthusiasm towards it? I can tell you that I wish it would be on my weekly shopping list but it will not, as I am the only one who eats it in my household! That doesn’t mean I will not buy it and cook it because let me tell you it is true about it being super easy to cook and yes it is a super food.

Do you want a boost of vitamin C and K? Then Kale has it; in fact it is the best source of these vitamins and more. It also has powerful antioxidant such as Kaempferol that is said may reduce cancer and cardiovascular disorder! High amount of Calcium and Magnesium is also in this leafy cabbage.

Kale can be either eaten raw (which I find bitter) sautéed or baked (which I much prefer). Because of its tough leaves give it slightly extra time when cooking.

So you have this super leaf vegetable, what do you combine it with? I thought it would be nice to add soft sweetness to this crunchy dish so I added sweet potato. I adore this root vegetable; it has lots of complex carbohydrates and beta-carotene plus it taste so good! Since cauliflower is in season why not add that in did you know it contains high vitamin C and antioxidant?

Okay shall I just turn this dish into a mega mind blowing healthy immune boosting treat to get your body ready to fight the cold? I accept the challenge. Say hello to Turmeric. Turmeric covered cauliflower taste delicious and will convert you to baking the cauli instead of boiling it!

Lets get cooking with these super ingredients; you will not need a cape to fly after eating this!

Ingredients

Handful of kale leaves, tear by hand leaving out the stalk

4 tablespoons of olive oil

3 garlic gloves

1 red bell pepper

2 cups of cauliflower florets (half cauliflower)

1 sweet potato

2 teaspoons of turmeric

Half a lemon juice

Seasoning

Method

Step 1- In a bowl mix the cauliflower, chopped red pepper, whole garlic cloves, seasoning and turmeric. Mix well with a spoon, as turmeric will stain your hands!

Step 2- Add 2 tablespoons of olive oil and mix well. Place in oven tray.

Step 3- In the same oven tray add chopped sweet potato to one side. So it doesn’t mix with turmeric. Cover in 1 tablespoon of olive oil. Place in oven for 20 min on 185C. Open oven half way and turn vegetables.

Step 4- Place kale in a baking tray and add the rest of the olive oil and massage in well with your hands. Place in the oven for 15 min, till leaves become crispy.

Step 5- Take out all the vegetables from the oven once cooked and crispy.

Step 6- Take the whole garlic cloves and with the side of a knife squeeze it out of its skin, chop and add to the roasted vegtables.

Step 7 -Place in a dish and squeeze half a lemon on top.
