Fish Dish

This is an easy recipe that doesn’t take much cooking time or preparation. It is for those hectic midweek days or a relaxing weekend where you don’t want to be tied up in the kitchen. What makes this Fish Dish so easy is that YOU  choose ANY particular fish you like and any vegetable too ! I usually just open all my cupboards and my fridge-freezer and see what I can add as a side to the fish.

I usually serve mashed or roast potato and something green ! If it is from a tin or freezer then I make sure I add olive oil, lemon juice and seasoning to it.

For this recipe I am using Dorade / Sea Bream fish. I find it very meaty and delicious. You can use any white or red fish, the cooking method is the same for all.

I am using frozen spinach, tined yellow beans, potatoes, mushrooms and spring onions. I will create 4 side dishes for the fish, 1-mashed potato, 2- roasted sweet potatoes, 3-boiled yellow beans, 4- roast mushroom and spinach with spring onion.

Ingredients

2 fish

seasoning

1 sweet potato

2 tablespoons of olive oil

4 large white potatoes

25g butter

seasoning

1 jar of yellow beans

few cubes of frozen spinach

few mushrooms

1 spring onion

 

 

 

Method

Step 1- To cook the fish, make sure it is cleaned from the inside, removing head and tail is optional. Make sure you slice open the fish and score a few lines from the outside. Then season well inside and out. I am using salt and pepper, if you have a favourite herb or spice please do use it.  Once seasoned, place in an oven try and cook on 180C for 20-25 minutes.

Step 2- To make the mash potato: peal and boil the potatoes till soft. Drain the water. Add seasoning and 25g of butter. Using a fork or potato masher, mash till very soft, you can add a splash of milk if you like.

Step 3- To make spinach & mushroom : in an oiled pan, fry the mushrooms and then add sliced spring onion, add seasoning and some spices, then add deforested spinach. cook for 10 minutes then squeeze half a lemon.

Step 4- For the beans,  just heat and drizzle a bit of olive oil.

Step 5- For the sweet potato, it’s very simple, peal the skin off, cut into pieces, drizzle with olive oil and oven bake till crispy.

Assemble all together and serve hot !
