Autumn is here ! Paris is slowly starting to change… in colour. I just love it when you witness nature changing. Trees are displaying beautiful autumn colours which congers up lots of lovely images from photographing yourself kicking fallen leaves, to drinking hot chocolate, Halloween around the corner, wrapping yourself in your favourite woolly jumper and of course warm food.
I decided instead of a soup recipe to start the autumn season why not start with a warm salad! Well it’s not really warm, but for some reason I connected it with autumn !
Beetroot a winter root vegetable that is full of magnesium, potassium and vitamin A&C. That should give your immune system a boost for winter. So away not increase it in your diet? A simple way is to make a sale. This recipe I put together after eating my mother in law’s beetroot salad two weeks ago. It was delicious, I didn’t have the same ingredients so I adapted slightly. All I could to add is its super quick, healthy and keeps in the fridge for two days.
Ingredients
1 Beetroot (pre cooked)
1 carrot
Handful of walnuts
Handful of pomegranate seeds
Seasoning
Juice of 1 lemon
Method
Step 1. Grate the carrot and chops the beetroot in a bowl.
Step 2. Add some chopped walnuts and pomegranate seeds. Then add the seasoning and lemon juice.
