Easy Chicken Pie Recipe

I discovered a very easy way of making chicken pie and I thought I would share it with you all. Since we are all busy and need some nourishing food that doesn’t require a lot of cooking time. I may be cutting cooking time but am not cutting on taste.

I was on one of my walking discovery adventures with my friend in the fifth arrondissement of Paris, when I asked her what could I do with some left over chicken I had. After a few ideas between us she suggested chicken pie. I thought I might find it difficult to make the sauce before I get the children from school, but I was wrong. The dish took no time at all and everyone enjoyed it even my husband! Who is my worst critic.

The main ingredient is chicken of course, cooked chicken. I used my left over roast chicken (It just made it so much simpler) If you don’t have any left over cooked chicken then you can cook it and once cooled shred enough to make 2 full cups… or more depending on te size of your dish !

 

 

Ingredients

25g of butter.

1 full large heaped tablespoon of flour

200ml of stock (I used a cube of vegetable stock dissolved in 200ml hot water)

3 table spoons of double cream

Handful of diced mushrooms

2 cups of shredded chicken

1 diced potato

1 diced onion

1 small tin of peas and baby carrots (optional)

1 packet of ready-made puff pastry

1 egg

Seasoning

 

Method

Step 1- In a pan melt the butter and add the flour and whisk till you make a roux.

Step 2- Slowly add the stock and stir well on a low heat. Let it simmer then add the cream. And keep whisking till you reach a slight thick consistency. Then remove from heat and let it cool.

Step 3 – In another pan add some butter and gently fry the diced onion, mushrooms and potato. Then add the shredded chicken, and tin of washed peas and carrots. Fry for few minutes then transfer the ingredients to sauce pan.

Step 4- In a medium size ovenproof dish, smear some butter around and add the pie mixture.

Step 5- Roll out the readymade pastry on top of the ovenproof dish. Crefully trim around the edges and cut a few air holes into the pastry. This will help the steam to escape.

Step6- with any extra pastry trimmings make some decorative designs. I just a simple cross overs.

Step 7- Brush the pastry with the a beaten egg. Before placing in the oven.

Step 8- Bake the pie in the preheated oven 180C for about 25-35 minutes. The top should be nicely browned.
