Burrito is a Mexican tortilla wrap. The main ingredients are the wheat tortilla, meat, beans and salad. It could be a bit tricky to make but as long as you understand these simple steps you will be fine.
The steps are these; getting your stuffing ready, assembling and wrapping !
You have your Tortilla bread, then you decide on which meat to use, I am using mince beef you could use chicken or lamb. Rice, beans, salad, cheese and the sauce are the other ingredients. In fact you can change the ingredient as you see fit that what makes them so versatile and great. The fun thing about making this into a meal is you can get your kids involved in assembling their own sandwiches and watching them trying to wrap the tortilla unsuccessfully !
This recipe makes for six burritos. You can serve with yogurt or guacamole or even tomato sauce. You can use Mexican seasoning and if you don’t have any then use paprika or even smoked paprika as it taste better. I am using Cumin, Paprika, cayenne pepper, salt and pepper. You can also add onion powder or dried oregano.
2 teaspoons of Cumin
2 teaspoons of Paprika
half teaspoon of Cayenne pepper
2 tablespoons of oil
500g mince meat ( I am using beef)
2 gloves of crushed garlic
1 small white onion
3 tablespoon tomato puree
2 tablespoons of water
1 cup cooked rice
1 small lettuce (chopped)
1 small can of sweetcorn (Drained and slightly cooked)
1 small can of kidney bean (Drained and slightly cooked)
1 large tomato, diced
half red onion , finally chopped
handful of chopped coriander or parsley
1 cup of shredded cheddar cheese, us more if you want it cheesy!
Step 1-In a oiled pan, fry diced white onion and beef with the spices. Add garlic, tomato puree and a bit of water. leave to cool once cooked.
Step 2- Dice red onion finely, chop and grate all other ingredients separating them all into bowls.
Step 3- Drain the canned sweetcorn and beans, wash them and cook if they need it. Place in separate bowls.
Step 4- Cook a cup of rice by boiling it in water till tender and drain. Place in separate bowl.
Step 5- ASSEMBLE the wrap ! Bring a warm tortilla on to a plate and place the rice first, then meat in the centre. Add salad and other ingredients. Fold up the bottom of the tortilla to cover the filling then fold the edges in. Roll tightly and enjoy!
You can add the sauce inside the wrap or as a side dip.
