As am scrolling through my Instagram account I notice Boneshaker Doughnuts are showing you how to bake their cookies ! A very easy to follow recipe on top , how can I not try this. Plus to tell you a secret I have never attempted to bake cookies, biscuits yes but I would usually get the ready made mix and bake them with my son.
I was excited to try it and so I did, but failed at the first attempt ..why , because I couldn’t read my own handwriting !!! Dahhh. Instead of 20ml of milk I put 200ml! Where did that extra zero came from ? Anyway second attempt was successful and I would be doing them for the third time next week. Thank you Amanda AkA Boneshaker Doughnuts for this recipe that is not only delicious but quick to make and get my boys involved in.
Lets bake those cookies
Ingredients
145g Flour
55g White Sugar
40g Brown Sugar
1/2 teaspoon Baking Soda
1/2 teaspoon salt
20ml milk
15ml oil
1 Dark chocolate bar (salted is best) Or you can use chocolate chips
Method
Step 1- In a large bowl (or mixer) place all the dry ingredients and mix well.
Step 2- Add the milk and oil gradually and mix well till you start to get a dough like form.
Step 3- Break the chocolate bar into small pieces and add into the mix.
Step 4- Once you have a soft dough like form take it out and kneed it well for 1 min and wrap it with cling film and place in the fridge for 2 hours.
Step 5- Take out of the fridge and tear from the dough and roll in your hands into a ball.
Step 6- Place the dough ball on a baking try and press with your fingers squishing the ball into circles.
Step 7- Bake in oven at 106C for 12min.
Step 8- Sprinkle with sea salt once out of the oven and let it cool (optional)

I suppose you can add nuts and white chocolate to this recipe, I will try to add dried apricots next time or white chocolate and see what the result will be. Experiment and enjoy baking tases lovely cookies.
